 Characteristics:

smooth consistency; does not harden upon baking, pronounced fruity flavour, intended for commercial use by confectioners and bakers.

Application:

 for baking, filling, injecting: doughnuts, rolls, crescents; sticking together: biscuits, as a filler for layer cakes, as an ingredient of mousses and confectioner’s creams.
Advantages: ideal for baking in pies or tarts; attractive shine after baking, can be frozen.
