Pound Cake with Poppy Seed
Ingredients
4 eggs
165 g sugar
43 g course ground whole wheat flour
55 g potato flour
55 g oil
40 g orange rind
2 g baking powder
4 spoons of poppy seed mixture

Lemon icing
30 g milk
50 g butter
Icing sugar
Lemon juice
Spirit

Boil the milk with the butter, add icing sugar stirring all the time, in sufficient quantity to attain the consistency of thick cream. Add lemon juice and spirits to taste. Use immediately to cover cake.

Beat eggs with sugar, add course-ground whole-wheat flour and cornflour, baking powder, oil and orange rind. Grease the tin using the oil and dust with breadcrumbs. Put in a little mixture, cover with poppy seed mixture, then add remaining cake mixture. Bake for around 40-50 minutes at a temperature of 150ºC. When cool pour on icing and sprinkle on orange rind.
