Apple-pie filling

1. Group name: apple-pie filling.

2. Definition: product obtained by the process of boiling high quality apples with additives such as sugar, food acid, possibly spices, exotic fruit, nuts and dried fruit. Additionally binding, preserving and other agents permitted under applicable domestic law can be used. Fruit is adequately prepared (peeled, cored, or cut into pieces).

Obtained from 120g of fruit per 100g of end product.

The product is not made of genetically modified components.

3. Product characteristic features:

• Sugar contents: from 15% up ;

• Ingredients: apples (or alternatively other fruit), sugar, modified starch – thickening agent, citric acid – acidity regulator, ascorbic acid – antioxidant, potassium sorbate - preservative, other flavour additives;

• Colour: various shades of pale yellow or typical for the ingredients used, slightly changed by the technological process.

• Smell and taste: sweet and sour, typical for the ingredients used, spices or nuts and dried fruit, without unusual aftertaste;

• Consistency: thin, spreadable with visible pieces of apples and refining additives used;

• Preservative content in air-tight containers as a percentage of weight: no more than 0,1 converted into sorbic acid count, 0,01 converted into SO2 count;

• Remains of heavy metals and microbiological cleanness as per the valid legal regulations in force;

4. Package type: jars, packing pails, barrels, cans of various volume;

5. Storage conditions in 0-18oC at relative humidity c.a. 75%. Best before date counted from the manufacturing date is

- 12 months for air-tight glass containers;

- 9 months for air-tight metal cans;

- 4 months for plastic containers like buckets or barrels;

6. Purpose: all consumer groups (with diet – related limitations);

7. Application: This fruit filling is stable temperatures of in freezing and baking. Ideal as a ready-made filling for baking or a cold additional ingredient for apple pies, cakes, desserts, ice-cream and other fancy confectionery products. Dosage as per the needs and experience.

8. Additional information: despite careful control, products of stone fruit may rarely contain fruit core.
